Southwestern Style Pizza
Yield: 8 individual pizzas
8 each Corn tortillas, 6 inches
1⁄ 2 cup Cilantro pesto, see below
8 ounces Grilled chicken strips
1 can, 15.5 ounces Black beans, canned, rinsed, drained
4 ounces Corn, frozen
2 each Green onions, washed and chopped
8 ounces Pepper jack cheese, grated
8 sprigs Cilantro, optional
1. Preheat oven to 400 °F.
2. Place corn tortillas on a baking sheet.
3. Spread 1 tablespoon of cilantro pesto on each corn tortilla. Place chicken,
black beans, corn, and cheese on each tortilla.
4. Bake for 6 to 8 minutes or until cheese is melted.
