HOW TO COOK PASTRY FOR PIE

PASTRY FOR PIE
Makes 100 servings, 2 – 18” x 26” pans. Bake in 400° oven.
INGREDIENTS MEASURES
All-purpose flour, sifted 2 qts. (or 8 cups)
Rolled wheat 1 qt. (or 4 cups)
Salt 1 ½ Tbsps.
Shortening 3 ½ cups
Cold water 2 cups
DIRECTIONS:
1.      Blend together first 3 ingredients.
2.      Cut or rub in shortening until mixture is granular; add water and mix.  Roll out on a lightly floured board.
3.      Place pastry in 18” x 26” pans.  Bake at 400° F. in regular oven 12 minutes or until brown, or bake at 350° F in a convection oven.
