RECIPE FOR CORN DOGS I

CORN DOGS I
Makes 100 servings. Cook in 350° deep fat.
2 oz. protein rich food
INGREDIENTS WEIGHTS MEASURES
Flour ¾ gal. & 1 cup
Sugar 1 ½ cups
Baking powder 1/3 cup
Salt ¼ cup
Dry milk 2 ½  cup
Corn meal 8 2/3 cup
Shell eggs ** 13
Water 9 ¾ cup
Cooking oil 1 1/3 cup
Wieners (8 per lb.) 12 ½ lbs. 100
Fat for deep frying
** Substitute 2 cups dried eggs and 2 cups of water for the eggs if desired.
DIRECTIONS:
1.      Blend together dry ingredients.
2.      Beat eggs, mix oil and water; add to dry ingredients.
3.      Stir just enough to moisten dry ingredients.
4.      Coat dry wieners in batter and drop into deep fat heated to 350° F.
5.      Cook for 5 minutes or until golden.
6.      Drain on absorbent paper and SERVE AT ONCE.
