ZUCCHINI SOUP (serves 10)

 

1 ¼ Lbs. Italian sausage (browned)

1 ½ Cups celery, chopped

2 28 oz. cans of tomatoes (or fresh ones)

1 ½ Cup tomatoe juice

1 ½ Lbs. zucchini, diced

2 Tsp. salt

1 ½ Tsp. Italian seasoning

½ Tsp. garlic powder

1 Tbsp. sugar

2 Green peppers, cut up in 1” pieces

Mozzarella on top when done.

 

Shredded brown sausage (drained).  Add celery and simmer for 15 minutes.  Add remaining ingredients not cheese and simmer 35 minutes.

 

Serve in bowls and top with cheese.
