MASTER CAKE AND COOKIE MIX
Makes 2.8 gallons of mix.

| All-purpose flour | 5 ¾ lbs. | 5 qts. & 1/8 cup (or 20 1/8 cups) | |
| Baking powder (double acting) | 2/3 cup | ||
| Salt | 2 Tbsps. | ||
| Sugar | 7 lbs. | 4 qts. (or 16 cups) | |
| Shortening, hydrogenated | 2 ½ lbs. | 1 ½ qt. (or 6 cups) |
DIRECTIONS:
1. Blend dry ingredients 5 minutes on mixer at low speed. Cut in shortening blending only 1 ½ to 2 minutes at low speed.
2. Store in covered container at room temperature.
3. To measure mix, pile lightly into container and level off with spatula. Keeps three months without refrigeration.
