MASTER CAKE AND COOKIE MIX

 

Makes 2.8 gallons of mix.

 

 

INGREDIENTS

All-purpose flour 5 ¾ lbs. 5 qts. & 1/8 cup (or 20 1/8 cups)  
Baking powder (double acting)   2/3 cup  
Salt   2 Tbsps.  
Sugar 7 lbs. 4 qts. (or 16 cups)  
Shortening, hydrogenated 2 ½ lbs. 1 ½ qt. (or 6 cups)  

 

 

DIRECTIONS:

1.      Blend dry ingredients 5 minutes on mixer at low speed.  Cut in shortening blending only 1 ½ to 2 minutes at low speed.
2.      Store in covered container at room temperature.
3.      To measure mix, pile lightly into container and level off with spatula.  Keeps three months without refrigeration.
